The starving student: Drink your way into summer with these cocktails

There is nothing — I repeat, nothing — better than finishing exams and going to have a drink on a patio where the sun is shining, and you could care less about that 50 per cent final because it’s done and you never have to look at it again.

Although, we do live in Raincouver and our spring weather so far has been less than promising. Patio season has yet to emerge from the depths of our bizarre winter, but that doesn’t mean you can’t go out for a drink or better yet, make them yourselves and save $9 on an iced-down, two-sip cocktail.

Try these recipes out and get your summer buzz started:

Blended lime margarita (serves four)

Ingredients: 

  • 1 1/4 cup of fresh lime juice (roughly five limes)
  • 1 cup triple sec
  • 1 cup silver tequila
  • 4 tablespoons of agave
  • 2 cups of ice cubes
  • Sugar and salt

Directions:

1. Get your glass and rim it with a wedge of lime. Mix sugar and salt together in a bowl, and rim the side of glass.

2. Combine all ingredients in a blender and blend until smooth.

Summer sangria (serves eight)

Ingredients:

  • 1 (750mL) bottle white wine
  • 2 peaches, sliced
  • 2 kiwis, peeled and sliced
  • 1 cup raspberries
  • 3 tablespoons sugar, or more, to taste
  • 1 (750mL) bottle sparkling white wine
  • 8 mint leaves

Directions:  

1. In large pitcher, combine all ingredients and stir.

2. Let chill in fridge for at least an hour to infuse fruits into liquor.

3. Serve cold.

Classic mojito (serves one)

Ingredients:

  • 4 lime wedges
  • 1 tablespoon superfine sugar
  • 6–8 fresh mint leaves
  • 2 ounces light rum
  • 3–4 ounces chilled club soda
  • Mint leaf to garnish 

Directions:

1. In a highball glass, muddle together the lime wedges/juice, sugar and mint until the sugar is dissolved.

2. Add rum, fill glass with ice and top with soda. Garnish with a mint leaf.
